Head of Dietetics

Saachi is the Head of Dietetics at Compass, supporting major developments since joining in 2023, including the creation and implementation of Moreish. With more than a decade of experience in food-service dietetics across FM organisations and the NHS, she combines clinical expertise with operational insight to deliver safe, inclusive and sustainable food services.

She specialises in menu development, culturally inclusive menus, therapeutic diets, regulatory compliance and recipe analysis, and has contributed to several BDA publications. Saachi previously served eight years on the BDA Food Service Specialist Group Committee, helping shape national standards. Beyond her professional work, she enjoys travelling with her family and exploring new restaurants from her ever-growing bucket list.

Rosa Losa

Head of Healthcare Catering

Rosa began her career with Compass Group in 2014 as a barista at Royal Surrey Hospital and has progressed through a series of operational roles, becoming Head of Food in 2023 and Head of Catering for Healthcare in 2024. She now supports more than 30 hospitals nationwide, focusing on operational excellence, standards and innovation to deliver safe, efficient and high-quality food services for patients and staff. Rosa’s expertise spans people development, retail strategy and patient dining innovation.

Outside the workplace, Rosa is passionate about cooking and loves experimenting with new flavours. She travels to Italy whenever she can to spend quality time with her family.

Jelio Gerassimov

Head of Healthcare Cleaning and IPC

Jelio has extensive experience in healthcare cleaning and infection prevention and control, having worked with NHS Trusts for nearly a decade to deliver complex operational and strategic projects. As Head of Healthcare Cleaning and IPC, he leads the design and delivery of evidence-based cleaning and decontamination programmes that support safe, compliant and high-quality clinical environments. Jelio is known for his innovative approach and for empowering teams to create spaces where excellent care can thrive.

He is committed to continuous improvement, wellbeing and high professional standards. Outside the workplace, Jelio keeps active, plays field hockey, and focuses his spare time on personal growth and mindfulness.

Matt Johnson

Head of Healthcare Security

Matt joined Compass in 2021 after 15 years leading security functions across multiple sectors and was appointed Head of Healthcare Security in 2024. He supports teams across the NHS estate and has driven innovations such as carbon-fibre body armour, enhanced healthcare-specific training, and redesigned uniforms to reduce the risk of violence and aggression-related injuries towards staff. Matt works at both strategic and operational levels, leading the development and continuous improvement of the healthcare security function.

He is a Certified Security Management Professional and serves on the IAHSS UK Chapter Advisory Board, with national recognition including finalist positions in the Workplace Violence Reduction Awards 2024 and NAHS Security Manager of the Year 2025. Beyond his professional life, Matt enjoys spending quality time with his family, getting out into nature, and pursuing personal development.

Stacey Dobson

Head of Patient Experience

Stacey is the Head of Patient Experience across acute, private healthcare and senior living sectors within Compass Group UK & Ireland. Since moving into healthcare in 2021, she has played a key role in developing and embedding the Positive Impressions cultural change programme, which has gained national recognition for its impact on patient, resident and service-user experience. With a background in operational leadership, guest experience and customer engagement, Stacey has a strong track record in delivering service improvements, staff development and data-led enhancements to care.

She is passionate about training, engagement and building partnerships that elevate experience standards across healthcare settings. Stacey loves the blend of people and data in her work and takes pride in supporting colleagues, communities and hospitals to make a meaningful difference to someone’s day.

Jeanette Whitehead

Head of Health and Safety

Jeanette is the Head of Health and Safety at Compass, progressing from her early career as a catering manager to leading safety across the healthcare estate. She has introduced practical innovations such as trash tongs and spill boards, strengthening safety culture and reducing risk across catering, cleaning, logistics, waste and security.

Her expertise spans healthcare operations, safety strategy, ISO lead auditing, IOSH technical membership and NEBOSH qualifications, and she has driven multiple ROSPA successes, including a 2024 innovation award. When she’s not championing safety, Jeanette enjoys travelling with her husband and spending time with her family and friends.

Jess Payne

Director of Social Value

Jess is the Director of Social Value at Compass One, leading the integration of social value across operations to create meaningful impact for colleagues, clients and communities. With a background in HR and business management, she brings a strategic and values-led approach to building inclusive organisational cultures.

Jess is a Chartered Fellow of the CIPD, an Associate Practitioner with the Institute for Social Value and a doctoral student, combining academic insight with hands-on expertise. Away from work, she likes gardening and walking on the beach with her family and rescue dog, Mika.

Rees Bramwell

Sustainability Director

Rees is a registered nutritionist specialising in public health and food nutrition, supported by a master’s degree in sustainability. He applies an evidence-based approach to improving population health through nutrition and food systems.

Rees maintains his professional registration with a focus on public health practice. When he’s not working, he can usually be found outdoors with his son, exploring nature, playing football or cycling through the park.

Bruce Toon

Culinary Director, Healthcare

Bruce is our Healthcare lead on culinary strategy and direction, which involves creating nutritious, tasty meals and exciting dining experiences for patients, residents, staff and visitors across our Healthcare sector for our NHS teams and private hospitals clients across the UK.

Bruce has a wealth of experience in culinary, food nutrition and marketing having worked in a range of roles and a number of sectors for Compass Group in food service development.

Culinary development and training through our apprenticeship programme, whilst collaborating with our dietitians are areas of great importance to Bruce.

Bruce has a passion to select and utilise seasonal produce from within the British Isles. Demonstrating a commitment to supporting the local economy, and ensuring we do the right thing from an environmental perspective, as we continue to support our clients journey to Net Carbon.

At a time when food and diet is being highlighted as playing a vital role in people’s health and wellbeing, and when a light is being shone on the importance of good quality food throughout healthcare with the Hospital Food Review, Bruce is delighted to be part of Healthcare’s amazing culinary adventure.

In his spare time, Bruce enjoys playing tennis and spending time with his family.
